I'm such a huge fan of quinoa not only because of the nutritional benefits I get from it but because I love mixing it with other ingredients and my dishes turn out to be extra special all the time. I love the nutty flavor and the crunchy texture of the golden grain.
I'm always looking for vegetarian quinoa recipes and I recently tried to make the quinoa paella. Here are the ingredients to whip up this scrumptious dish:
1 cup quinoa
1 1/2 cups vegetable stock
1/2 cup dry white wine
1 tablespoon olive oil
1 medium onion, chopped
1 red bell pepper, cored, seeded and chopped
1 green bell pepper, cored, seeded and chopped
2 cloves of garlic, minced
1/4 tsp paprika
A pinch of saffron
Salt and pepper to taste
In a large pan, heat the oil and sauté onion and bell peppers. Cook for about 4 minutes and then add the garlic, paprika and saffron. Simmer for 2 minutes and then stir in the quinoa, stock and wine. Bring the mixture to a boil and then season it with salt and pepper according to your taste. Lower heat to medium and simmer for about 15 minutes or until the liquid is absorbed. Turn off the heat and decorate your paella with lemon wedges. Serve it immediately. This vegetarian quinoa recipe is so easy to make and trust me, it's a crowd favorite too.
You can add more vegetables if you want like peas, garbanzo beans or carrots. I love this vegetarian quinoa recipe because it's so delicious and I will never get tired of having it on my dinner table.
